I’m sure you’ve all seen the commercials for Taco Bell’s Doritos Loco Taco, in which the guy drives some unGodly amount of miles just to get a taco from Taco Bell with Doritos for the shell.
The concept simultaneously appalled and fascinated me. I mean, Taco Bell in general forces you to make terrible life choices, but to add Doritos to that mess? Seems unconscionable. But they did it, because that’s what the people want.
One day my husband lost his mind and ate one. And he went back another day and had a second, third and fourth. Let’s just say he enjoys Taco Bell and Doritos.
While sticking my hand in a bag of Doritos during the witching hour after work but before dinner, when I’m often so ravenously hungry I’ll eat anything I can find, I had a brainstorm. Doritos + ground beef + Taco seasoning….wasn’t that just like a Doritos Loco taco? Thus Dorito Loco Nachos were born.
I started with ground beef and 1/4 cup of taco seasoning from the huge Sams Club bottle in our pantry.
While that was simmering, I opened up a can of black beans — I LOVE black beans, and because my husband doesn’t, I get to take the leftovers for my salads. Score one for
PROTEIN! I know the Dorito Loco taco doesn’t have beans, but it was a yummy addition to make it more filling and less like meat on top of Doritos.
To give it a little more flavor, I added a couple tablespoons of salsa and 1/2 tablespoon of minced garlic.
I warmed the beans up in the microwave, piled them all together and added some cheddar cheese on top. And that was dinner.

I love this meal because it’s easy, tastes like you’er going out to eat and is much healther than the Taco Bell version — you get to control everyting you put into it (and you know the meat is 100% meat.)

Homemade Doritos Loco Nachos a la Taco Bell
1 lb ground beef
1 packet taco seasoning
1 can black beans
2-3 tbsp salsa
1/2-1 tbsp minced garlic
1 bag Nacho Cheese Doritos (you’ll only use about 12-15 chips per serving)
Sour cream (optional)
Guacamole (optional)
Salsa (optional)
Cheddar cheese (optional)
Cook the beef and add taco seasoning per directions on the packet. In a separate bowl, combine black beans, salsa and garlic. Warm the beans on the stovetop or in the microwave. Line a plate with 12 to 15 Doritos. Layer with ground beef, black beans and any other taco toppings as you’d like. Top it off with shredded cheddar cheese.






























Yeah I would definitely get down on this. While the actual thing from Taco Bell seems a little scary, a homemade version just sounds delish. And I love some Doritos. Plus I have a 64 oz thing of salsa in my fridge at all times.

Looks good to me. Except for the beans. What’s driving me crazy about the Taco Bell Doritos taco thing is the whole “Your taco is a Doritos” thing. A Doritos? I think one Dorito is one Dorito. Without the S. I’m sorry – this has been really annoying me obviously.
Awesome!!! I’ve also heard people using the Doritos as a topper for casseroles which I thought sounded awesome. I’m shocked that as much as my husband LOVES Doritos he has NO desire to try this taco… me on the other hand… WANNNNTTTT!
I found a taco casserole recipe which I’m planning to make this week – it has Doritos crushed on top of it! And crescent rolls as the base. Yeah, it isn’t gonna be healthy.
Even my grandma’s old church cookbook had a taco casserole with I think regular tortilla chips crushed on top of it. Sounds good to me!

Yes! This is what I always eat when we have tacos. No tacos for me, I would rather have Doritos nachos! I like the idea of adding the beans. We usually have spicy refried beans and mexican rice with this, either on the side or mixed in. It is too yummy!
That’s what I do too! I love corn taco shells but hate how they break apart after two bites. Then several years ago we had a “walking taco” fundraiser thing at work for someone who was sick. Single serving bags of Doritos opened up and meat and toppings put on top of the chips, served in the bag with a fork. Genius!!! Now that is the only way I eat tacos at home…crushed Doritos in a bowl with all the fixings on top, eat it like a salad! Oh, and Fritos (esp. chili cheese flavor) make another great base for a taco “salad”.

i can’t stand Nacho Cheese doritos, so put this on top of some regular tostitos and i’m good to go. LOVE black beans!

Honey, I've been doing that for years making nachos with Doritos. I have four kids and watching cooking shows and also coming up with great ideas to feed them right. I also added shredded lettuce & cheese & tomatoes with guacamole& sour cream. Glad you like it because we love it.
first of all, Taco Bell does not force anyone to make bad food choices. we have free will. Taco Bell just has things on the menu that can be bad for a person, as does all fast food joints, diners, and pizza places. they all have bad food choices on the menu but they also have healthier choices as well. it's us who decides to eat the bad items. they may be addictive because we like the taste and want more but by no means are they forcing us to go eat it, that is a choice we make. I personally do not eat this stuff because I don't like eating things that I have not personally prepared for myself but the point of the story is this… they put it out there, it's us as humans who make the conscious decision to eat it knowing its bad. anyone who went to grammar school knows it's bad because we learn the food pyramid and good food/bad food choices in school. this society blames the restaurants and food companies for making people fat or unhealthy instead of putting blame where it belongs…. on us, the ones who choose to eat until our eyes bulge!
